Reserve 1\/2 cup of pasta water; drain the pasta and set aside.<\/li>\n<li>Heat oil in a large skillet over medium-high heat. Add chicken, salt and pepper, and cook for 5 to 7 minutes. Add garlic and stir until fragrant.<\/li>\n<li>Add wine, lemon zest and lemon juice; bring to a simmer over medium-high heat. Add butter and 1 tablespoon Parmesan; cook, whisking constantly, until the sauce is creamy and emulsified.<\/li>\n<li>Add 1\/4 to 1\/2 cup pasta water; stir occasionally until the sauce thickens slightly, about 2 minutes.<\/li>\n<li>Add in the spinach and pasta. Cook over medium heat until the spinach is wilted and bright green.
