Saut\u00e9 garlic (and onion if using) for 2 minutes, until fragrant and lightly browned.<\/li>\n<li class=\"p2\">Add bell peppers, carrots, and olives. Cook for 5-7 minutes, stirring frequently.<\/li>\n<li class=\"p2\">Stir in spinach until wilted, about 2 minutes. Then, stir in canned tuna and tomato sauce. Season to taste with salt and pepper. Remove from heat.<\/li>\n<li class=\"p2\">Transfer cooked vegetable and tuna mixture to a large baking dish. Add pasta and remaining 1 tbsp of olive oil, and stir until well-combined.<\/li>\n<li class=\"p2\">Spread pasta mixture in an even layer in the baking dish. Sprinkle cheddar cheese over top of everything in an even layer.<\/li>\n<li class=\"p2\">Transfer baking dish to the oven.
